Daily Dinner Idea: Steak Tacos
As a result of the recent hurricane and subsequent Nor’easter on the East Coast, I found myself working from home yesterday (and by home I mean cramped apartment). In a moment of writer’s block and impending hunger, I glanced up from my computer and noticed that my brand-new crock pot was just begging to be used. Since crock pots are usually a day-long ordeal, I figured an afternoon at home was the perfect excuse to test it out. The result: steak tacos (delicious ones, if I do say so myself).
Why we like it: Because, honestly, who doesn’t like tacos? Especially of the homemade variety.
Time: 8 hours (well spent)
1 green pepper, chopped
1 large onion, chopped
1 jalapeno, chopped
1 1/2-2 pounds flank steak
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1/2 tsp garlic powder
1/4 tsp onion powder
1 tsp cumin
2 tsp chili powder
(cilantro, avocado, limes, salsa for topping)
-Mix together all of the spices and rub all over the flank steak
-Place the meat at the bottom of your crock pot and cover with the chopped veggies
-Turn the crock pot to the lowest setting and cook for 8 hours
(Paint your nails, prepare margaritas, walk the dog…do whatever you need to do for the next 8 hours to avoid peeking into the pot!)
-Once done, shred the meat with a fork and serve as you please. The mix of corn tortillas and cilantro made everything taste and look so fresh!
