Recipe of the Week: Pumpkin Pancakes
We’ve been on a pumpkin kick lately, so these Pumpkin Pancakes by Steph of Raspberri Cupcakes caught our eye while we were clicking around on Pinterest. Her recipe, which incorporates pumpkin puree into pancake batter, gives this breakfast classic an awesome autumnal twist. You can use canned or fresh pumpkin (simply save what you scoop out of your pumpkin after you carve it). Top the hotcakes with simple maple syrup, or take another tip from Steph and use cinnamon-spiced butter as your finishing touch.
